Today I made fresh salsa!
Making some delicious fresh salsa at home hardly requires a recipe, but here is what I did today with some fresh summer veggies!
#1- Onions. Today I had a few scallions and not much else, so in they go! I like red onions a lot, but if you use them make sure to dice them finely as they can be intense. Any kind of onions you have at home are fine- green, white, red...
#2- Cucumbers. I love cucumbers in everything really, so I add them to my salsa. They keep their crunch well and add a coolness that I like.
#3- Peppers. Some members of my household aren't really into the hot peppers deal, so today I added an orange bell pepper. It will hold its crunch well and add a bright sweetness to your salsa.
#4- Tomatoes. Any kind of tomatoes you have in your garden are great. If you are using big beefy ones, make sure to seed them because your salsa can end up very watery. To further combat watery-ness, put your diced tomatoes in a colander (with paper towel or cheese cloth underneath if your holes are bigger than your dice), salt the tomatoes, and allow them to drain. Today i just diced them all up, scooped up a handful, and squeezed some water out before throwing them in.
#5- Season! Salt, pepper, lime juice and preferably cilantro. We didn't have fresh cilantro today so I used that cilantro paste in a tube you can buy at the grocery store. Which is really kind of handy considering how expensive fresh herbs are and how we can never manage to keep cilantro alive in our garden. ;-)
Cover your container and shake away!
... and then finally.... DEVOUR! with the chip of your choice.
OR- grill some chicken and smother it with your tasty salsa!
OR- add some diced avocado, black beans, and queso fresco for a killer wrap or salad topping!
OR- throw some inside your scrambled eggs tomorrow morning!
